Consider the Lobster

The title work in David Foster Wallace's new collection, Consider the Lobster: And Other Essays, examines the lobster's plight in a way one reviewer finds completely impartial.
The same fairness finds Wallace arguing on behalf of lobsters in the title essay, a travel piece purporting to be about the Maine Lobster Festival, but veering into inescapable reflections on cooking crustaceans. Amusingly, Wallace wrote this for Gourmet magazine -probably the journal's first piece to ask why gourmets excuse the cruelty of live boiling, a practice he outlines in both visual and scientific specificity.
